I am trying to make it so my statsheet stuff only shows for the GM and not the players. Everything I put in shows for me, but when I go to view as player I can still see it.

With * to place it on the statsheet and # to make it GM visible only, right? So why can I always see it?

View as player is an emulation and certainly not perfect. Id suggest you make a second instance of Maptool and log in as player on the first.
